Old Fashioned Oyster Dressing
You can enjoy this dressing with any roasted bird including chicken or turkey or serve it with entrees such as roasted pork loin.
Old fashioned oyster dressing. Oysters and their liquid add moisture and flavor to the dressing. Saute onions and celery. Sprinkle a third into a greased 1 1 2 qt.
Add chopped oysters bread crumbs and all seasonings. Add turkey neck and giblets and simmer over medium high heat for 10 minutes. Ingredients 2 1 1 2 pounds loaves of white bread cut into 1 inch cubes 1 cup butter 1 eaches onion minced 4 cloves garlic minced 2 stalks celery chopped cup chopped fresh parsley 4 pints shucked oysters.
Directions combine cracker crumbs butter salt and pepper. Next stir the dressing around for a bit and give it a taste. If dressing seems too dry add a little oyster.
Stir to mix well. In a saucepan place 1 1 2 cups of pan drippings and add the onion celery bell pepper and garlic. Add to bread mixture and stir well to combine.
Preheat oven to 375. Add chicken broth and liquid from oysters. If too moist add more bread pieces.
Chop celery and onion then saute in butter. Arrange half of the oysters over crumbs. If you think it has plenty of oyster flavor great.
